Simple quiche

Alfie is now over ten months old but a couple of months ago I was worried he wasn’t getting enough milk, a feeling most of my mum friends shared, unless they were worried of the opposite and their little ones having too much! You can’t win!

Throughout weaning I had been using tips and recipes from a great book called ‘The Contented Book of Weaning’ by Gina Ford. Although the book isn’t about baby led weaning it does offer great advice about nutrition and how to intoduce food. In the book it suggests some food ideas for when little ones go off their milk and it suggests mini quiches. Instead I’ve adapted a large quiche recipe and just offer it as slices! 

Ingredients

  • 1 deep blind baked short crust pastry case

  •  5 large eggs
  • 1 courgette and 1/4 onion finely chopped 
  • 284ml single cream (I’ve used double too)
  • 150ml full fat milk (cows or formula)
  • 140g cheese (I used cheddar)
  • Sprinkle of nutmeg

How to make

  • Oven @160 degrees Celsius
  • Gently fry onion and courgette

  • Beat eggs, cream and milk 
  • Use fork to add cheese and half of the veg to the egg mixture 
  • Pour into case and scatter remaining veg
  • Bake for 35-40 mins until the filling looks puffed up over case
  • I tend to serve with some sweet potato wedges, cucumber, humous etc…
